125 ml wa...Glühwein (=mulled wine)<br /><br />250 ml red wine<br />125 ml water<br />2 cloves<br />1 cinnamon stick<br />fresh lemon zest<br />fresh orange zest<br />2 tablespoons sugar<br /><br />Bring water and sugar among the spices to the boil and cook it for a few minutes. Add red wine<br />and let it get warm, but do not cook!<br /><br />Glühwein-Gelée<br /><br />70 ml Glühwein<br />50 ml orange juice<br />10 g sugar<br />1 gelatine leaf<br /><br />Bring orange juice and sugar to the boil, add previously prepared Glühwein. Stir in gelatine, pour<br />it into glasses and let it cool for 1-2 hours.<br /><br />Glühwein-Mousse<br /><br />125 ml orange juice<br />1/4 cinnamon stick<br />2 cloves<br />3 gelatine leaves<br />50 ml Glühwein<br />3 egg yolks<br />60 g sugar<br />20 ml rum<br />250 ml heavy cream<br /><br />Bring orange juice together with the spices to the boil and reduce to 100 ml. <br />Beat egg yolks, sugar, orange juice and Glühwein over a bain maire to a thick and foamy cream.<br />Dissolve gelatine in warmed rum and stir it to the cream, then let it cool.<br />Fold in beaten heavy cream and pour it into the prepared glasses.
