Yesterday afternoon it was snowing all the time, and it still has not stopped today morning! So we are almost sinking in snow. It is absolutely beautiful! So yesterday afternoon I felt like preparing the first bunch of cookies for Christmas. In the recipe said to use hazelnut, but I changed it to pecans and it did not work out, I guess it was too fat that way, and I should have reduced the butter. Anyway later on I decided to give it another go with hazelnut.
Ingredients:
150 g flour
1 pinch of baking soda
150 g sugar
1 tablespoon vanilla sugar
150 g butter
150 g grated hazelnut
5 tablespoon apricot jam
100 g chocolate
Mix flour with baking soda, add sugar, vanilla sugar, hazelnut and butter and knead a dough.
Put it in the fridge for about an hour, after roll out and with a help of a cookie cutter cut it in the form you want to. Bake for about 10 minutes on 180°C. Melt chocolate and cover half of the cookies with it. Smear jam on the other half and put the halves together.
