Under cover

As the lack of posts shows I am still sort of on the run and have almost no time to cook. I have discovered some desperate bell peppers in the bottom of the fridge so I prepared this improvised and surprisingly delicious soup.

2 bell peppers
1 onion
1 teaspoon fresh ginger

1 tablespoon mascarpone
juice of 1 lime
chicken stock
salt, pepper

1 tablespoon oil
Heat oil, add chopped onion, bell pepper and grated ginger. Add stock so that it is covered and cook over medium heat for 20 minutes. Puree, add salt, pepper, tabasco, lime juice and mascarpone.

That soup looks delicious, I too have a couple of peppers lurking that really need used, will have to try your recipe.
